A quick snapshot of a good friend tucking into a plate of some amazing linguine with fresh crab at Il Lido restaurant in Sentosa (Singapore). Il Lido’s always been a favourite of mine and my wife’s. Of course, we’re very biased. The owner’s wife is one of our business partners in our communications agency. Nonetheless, Il Lido has always been a chic, great Italian restaurant with unparalleled views. And the food? Well, it’s currently better than it ever has been. And that’s because Beppe De Vito, the restaurant’s always smiling owner, has traded in his signature slim-cut suits for chef whites… not that he’d actually wear whites. This Italian fashionista prefers checked dress shirts and high necked black or navy aprons, paired with designer jeans and shoes. What’s amazing though is not Mr De Vito’s wardrobe but the food. This self-trained chef has overhauled the restaurant’s menu and is putting out food that is simply remarkable. Especially when you realize that Beppe has spent his whole career working front of house and not in the kitchen. But after two decades of telling chefs what to do, I guess he’s figured out how to do things himself. And, lemme tell you, he’s doing them better than any of his previous chefs ever could.
